The original recipe called for ground beef. I opted to use steak. Feel free to switch it up to match your preferences!

Ingredients:

  • 1 flank steak*

  • 1/2 small onion, diced

  • 2 cloves minced garlic

  • 1/4-1/2 teaspoon ground ginger

  • 2 Tablespoons vegetable oil

  • 1 tsp. sesame oil*

  • 2 cups beef broth*

  • 2 Tablespoons soy sauce

  • 2 packages tofu shirataki noodles (angel hair)

  • garnish: red pepper flakes

  • you can add in some Sriracha to punch up the spicy flavor (not calculated into nutritional facts)

Directions:

  1. Grill your flank steak until it reaches medium rare. Remember, when you pour the hot broth over your noodles and steak, the steak will cook more.

  2. In the large pan, sauté the onion, garlic, ginger, vegetable and sesame oil until the onions start to soften.

  3. Add in the beef broth and soy sauce and simmer for 5-10 minutes. Switch heat to low to keep warm while you prepare noodles.

  4. Empty and drain the packages of Miracle noodles. Rinse with cold water for about a minute and drain in a colander. Bring a pot of water to a boil. Once boiling, add the noodles and cook for 1 minute. Drain and pat dry with a paper towel. Add the noodles to the warm broth mixture.

  5. While the broth is warming, slice your steak into thin slices.

Serving Suggestions:

These steps are optional and based on preference. I like to make food an experience!

Add a serving of noodles into a serving bowl.

Top the noodles with your sliced steak and pour the hot broth over.  Garnish with chopped green onions and red pepper flakes.

*Notes: Size of the flank steak depends on how much you want in your ramen and how many serving you are making.

I doubled the broth and sesame oil because I find that the recipe does not make enough broth for the amount of noodles, but be careful because most of the carbs in this recipe are in the beef broth.
