Cilantro Lime Cauliflower Rice

Ingredients


1 small head of cauliflower, riced

1 teaspoon olive oil

1/2 lime

1 tablespoon fresh cilantro, chopped


Instructions


1. Heat olive oil using a medium pan over medium-high heat

2. Add in riced cauliflower and cook until tender, about 8 minutes

3. Once cauliflower is soft, squeeze half of a lime over the rice and stir to coat

4. Remove from heat, mix in the chopped cilantro and serve
